The Process of Making Forged Blades

For double-bevel knives (top row in photo)
1–4: Soft iron and steel are combined and the metal is forged into a rough shape.
5–8: The handle part of the knife (the part to be slotted into the handle) is shaped, and the metal undergoes finish forging to eliminate any unevenness in the blade and enhance its hardness.
9–10: The metal is mainly cut into the shape of the knife, and its shape is adjusted.
11–12: The metal is mainly heat-treated in order to change its metallographic structure, or "grain," further hardening it.
13–15: The knife is ground, giving it a sharp edge and beautiful finish.
For single-bevel knives (bottom row in photo)

Echizen Forged Blades, a local specialty of Echizen city, are made using the techniques passed down by the swordsmith Chiyozuru Kuniyasu, and boast over 700 years of history and tradition.
Traditional Japanese knives are made through hammer forging. By repeatedly hammering the metal, similar to how Japanese swords were made long ago, the metallographic structure, or the "grain" of the metal, becomes exceptionally fine and even, as can be seen through a microscope. This greatly contributes to the excellent cutting performance of these blades.
